Telangana’s favourite and my personal favorite Pachi Pulusu is a dish that embodies the essence of Telangana’s culinary heritage. The word “Pachi” means “Raw”. This tangy and spicy stew (lighter in consistency than a stew) is a refreshing break from the usual heavy and rich gravies. Its unique taste and texture come from a delightful combination of tamarind, curry leaves, coriander leaves, and a medley of spices.

Tamarind paste, water, green chili, onion, cilantro, salt. , Pachi Pulusu Tempering: mustard seeds, cumin,dry red chili, sunflower oil, coriander leaves and curry leaves.
